Carrot Snack idea

minutesYou know how I always bang on about eating your vegetables well I’m doing it again . I try getting clients eating 1-2 cups of their favourite raw veges per day.
Carrots are an amazing food story to share, a root vegetable which can be eaten raw, steamed or roasted. The colour is due to the photochemical beta-carotene. As an anti-oxidant it plays a role in protecting our cells against oxidative damage. Other minerals/vitamins present are A, C & K, B6, folate, potassium, iron, copper, and manganese plus fibre. Vitamin A in carrots which, are particularly high, helps assist the maintenance of your immune system and your vision.
Finally because carrots contain fat soluble vitamin A its helpful to eat it with some fat to increase the bodies ability to absorb it.
Ingredients
1 to 2 carrots, wash, chop and eat.
Directions
- 2 carrots is one cup and you’re half way there to my challenge of 2 cups per day between main meals.
Notes
- This vege cup will give you about 3.6gms of fibre which is 12% of your daily recommended amount. You need to aim for about 30gm per day for adults.
- My suggestions to add to the carrots are raw carrot sticks with cheese, avocado salsa, cream cheese, yogurt dip and if roasted or steamed drizzle with olive oil or garlic butter.
